How long have you been a chef?  

I have been cooking professionally for 35 years. I started in the family business as a young boy learning family

recipes and trained early in my career with chefs Antonio Mingalone and Nicola Notarnicola.  


One of your favorite things to cook? 

My favorite dishes to cook and serve would start with Osso Buco braised for hours in red wine and aromatic vegetables, served with saffron risotto. Secondly, I always like to create sauces to pair with pasta with the freshest product that I can get my hands on. 


Most popular dish in your restaurant?   

The most popular dish at Amedeo's was created by a former chef named Daniel who once asked if he could have a nickel for every dish that we served. Southwest Rigatoni is a staple at Amedeo's.


Unusual ingredients that you like?  

Celery root, arugula, broccoli rabe, wild mushrooms and fresh herbs. 


Something a home cook should know? 

Experiment! Try new recipes and be adventurous.


Any contests or awards you have earned/won?

We have been named by City Search as the most romantic restaurant twice. We also have multiple awards from Chamber Epicurean Awards and Events, Taste of the Town, best local restaurant by, and best lunch spot by The Tribune.

Do you do the cooking at home?

I love to cook at home on Sunday evening when the restaurant week comes to an end. It is relaxing and fun to cook for family and friends. However, my wife, Leslie, does most of the cooking at home. She prepares wonderful meals as a result of many hours in the kitchen with her mom as a teen and young adult. She also attended intensive pastry classes in Chicago and New York after graduation from the University of Houston.
