Carabba’s added Eggplant Parmesan to their list of specialties earlier this year, and it is delicious for a meat-free meal! Layers of sliced eggplant coated with Mama Mandola’s seasoned breadcrumbs and topped with pomodoro sauce, mozzarella and romano cheese comes with a salad or cup of soup and a side of your choice. Here it’s pictured with spinach sauteed with garlic.
