Debbie Decker thought it was time for a change. Last year, she left her job of 15 years with Anadarko and opened a baked good shop, Simply Baked Sweets, on West Lake Houston Parkway by Johnny’s Pizza. Decker and her staff of six are now keeping very busy baking exceptional cookies, bars, cupcakes, tea breads and cakes, all made using high-quality ingredients, such as Callebaut chocolate, Plugra butter and King Arthur flour.

Decker said opening the shop fulfilled a longtime dream of hers.

I’ve always wanted to have a shop like this. I learned how to bake from my grandmother and I’ve always had this idea in the back of my mind. Some of the recipes we use are my grandmother’s and some are mine. It’s a lot of work, but it is fun work,” said Decker.

The menu at Simply Baked Sweets includes their best sellers, as well as special items added daily. One of their most popular cookies is the potato chip pecan cookie.

“It’s basically our chocolate chunk cookie recipe, with crushed Ruffles potato chips, butterscotch chips and pecans added in,” said Decker.

Other cookie varieties include brown sugar snicker doodles, Heath bar pecan, oatmeal with cranberry and walnut, macaroons and black and whites. Their extensive selection of bars includes Mississippi mud; jam bars; peanut butter truffle; pecan praline; carmelitas, which feature an oatmeal crust covered with chocolate, toasted pecans and salted caramel, topped with crunchy oatmeal; and the popular S’mores bar.

“We sell the most cookies and bars,” said Decker; however, we also do a few types of cupcakes, including strawberry and birthday cake, various tea breads and on the weekends we make scones. We also offer custom butter cream cakes in different sizes and we make first birthday mini-smash cakes and gender-reveal cakes for bay showers.”

Cakes generally need to be ordered 48 hours in advance.

In addition to baked goods, the shop also sells Fat Cat ice cream, espresso drinks, Austin-based Cuvee coffee and root beer floats made with Saint Arnold’s root beer.

“Our prices are reasonable. Most of our classic cookies are $2 a piece, or a dozen for $20. The brownies, bars and cupcakes are $3.25 each and reduced by the dozen, said Decker.

Decker is a long-time resident of Atascocita and has three grown children, a daughter MacKenzie and two sons, Jay and John, all of whom graduated from Humble High School.

Simply baked Sweets is open for 10 a.m. to 6 p.m., Monday-Saturday and located at 20669 West Lake Houston Parkway in Kingwood. Decker said many of their customers are regulars and that the ability to buy just one cookie is a driver for many of them.

“People tell us they love to bake, but they don’t want to have three dozen cookies in the house. We offer the perfect solution,” said Decker.
